Interviews should always be a fair process because it shows that recruiters are doing fair and just decision making in terms of hiring. Biases and Prejudice should not be the main rule during interviews. In fact, this thinking should be eradicated in order to show the exact profile of an applicant.
Before joining the recruitment field, wanna-be recruiters should be aware that in order to be effective, one has to be open-minded but at the same discerning in terms of the decisions that you are going to make along the way. One thing that could help in eradicating these biases that you have in mind is through talking to an experienced one.
