My most-recent favorite application is Anagram. With it sitting in your Windows XP Taskbar, you can select any block of text containing someone's contact information, and hit your hot-key combination (by default, it's CTRL-C-C) and it sucks the information into an Outlook Contact file for you.
This is excellent for getting and saving information from resumes or from job-boards like Monster or Career Builder.
...Or, simply select the information from someone's email signature and zap it into Outlook's address book.
I learned about Anagram from the LinkedIn Toolbar, which has a free, lite version of Anagram's "grab" technology. Interestingly, LinkedIn's toolbar seems to actually use more system resources than this application running full-time in my taskbar...
(Maybe, since I blogged about this, Anagram will give me a copy for free, since my trial is about to expire!)
